Pressing shielded from the air (press under carbon dioxide), fast and quite smoothly, of ripe grapes. The grapes of Aligoté are very sensitive to the oxidation. Musts are filtered before the alcoholic fermentation to make, only, grape juice ferment. Breeding in tank during 10 months, and bottling early to protect the fruit and the freshness of the wine.
Pale gold color with green tints, brilliant and limpid.
Aromatic, delicate and fresh as a spring breeze. Emanation of Sauvignon variety, very fruity (apple) with gun-flint aroma.
Straight attack with ferm acidity, nice freshness, iodine taste (oysters)
Ideal with ham with parsley or seafood platter.
