Cold maceration during 12 days under protection of carbon dioxide to protect the precursors of aromas and the colors. Fermentation in tank with managed temperature. Vatting time of 18 days, soft and delicate pneumatic pressing. Maturing 50 % in oak and 50 % in tank.
Deep with purplish highlights.
Bouquet full of black cherries and raspberries with hint of musk and spicy notes, woody.
Rounded, full and fleshy with powerfull tannins. Well balalanced of freshness typical of Pinot Noir.
Poultry, Parma ham, mild cheese (Reblochon or Cîteaux).
2 to 15 years.
