The grapes are harvested when fruits reach up 14° natural alcool. Pressing shielded from the air (press under carbon dioxide), fast and quite smoothly, of ripe grapes. Musts are filtered before the alcoholic fermentation to make, only, grape juice ferment. Breeding and mature in oak (25% new oak) during 18 months, stirring of the lees. The long breeding on white wines brings a lot of stability and a very good ageing.
Yellow with gold highlights, brilliant and clear.
Its bouquet evokes butter with notes of pineapple, grapefruit and mix of vanilla and nuts slightly roasted.
Fleshy, perfect balanced with the acidity which gives a good length to the wine.
Scallops, lobsters and fresh-water fish in white butter sauce.
1 to 7 years.
